Winter warmer – spicy cauliflower soup

Start the new year with a healthy and hearty recipe that couldn’t be simpler to make.
Ingredients:
300g cauliflower
1 medium onion
1 red chilli pepper
2 cloves garlic or use lazy garlic
A few strands of lazy ginger
4 tablespoons red lentils
300ml vegetable stock
1 tin coconut milk
3 tbsp tomato puree
1 tbsp coconut oil
1 tbsp lemon juice
1 tsp paprika
2 tsp turmeric
1 tsp cumin
1 tsp ground coriander
Salt and pepper
Method:
1 Roughly chop the vegetables.
2 In a large saucepan, add the coconut oil then fry the cauliflower, onion, chilli pepper, garlic and ginger for about five minutes.
3 Add all the other ingredients, bring to the boil, then simmer for 25 minutes.
4 Once the vegetables have cooked through, whizz it all together carefully with a blender.
