Sweet potato and red lentil soup

Kick-start your year with this healthy, hearty soup recipe. Batch cook for easy weekday lunches or fill your freezer and enjoy a portion with delicious freshly made bread for a tasty weekend treat.

Ingredients (8 portions):
3-4 tbsp olive oil
2 medium onions, diced
4 cloves garlic or use lazy garlic small piece of ginger or use lazy ginger
2 tsp cumin
1 tsp turmeric
400g red lentils
1kg sweet potatoes approx
4 vegetable stock cubes
2L boiling water
Fresh rolls to serve

Method:
1. Put the red lentils in a large bowl and cover with cold water. Leave to soak for half an hour.

2. In a large saucepan, heat the oil and sauté the chopped onions, garlic and ginger for 5-10 minutes until softened.

Add the cumin and turmeric and stir for a couple of minutes.

Rinse the lentils and peel and dice the sweet potatoes. Add these to the pan along with the vegetable stock cubes and water.

Simmer for 30-40 minutes until the potatoes are tender.

Season with salt and black pepper. You can either eat this chunky or use a hand blender to make a smooth soup.

Serve with some lovely fresh rolls.
