Spicy pork and bean casserole

This recipe serves 4 but you could double up to save energy and freeze into portions for an easy dinner another day.

Ingredients:
1 tbsp oil
500g pork cubes
1 onion, diced
1 clove garlic, finely chopped (or use lazy garlic)
1 tbsp tomato purée
1 tsp chilli powder
1 tsp dried oregano
1 can chopped tomatoes
1 can red kidney beans, drained and rinsed
1 can butter beans, drained and rinsed
150ml stock
200g whole button mushrooms
Salt and pepper
1 tsp cornflour blended with 2 tsp cold water
500g potatoes, thinly sliced
1 tbsp melted butter
Fresh parsley to garnish


Method:
1. Preheat the oven to 180°C (fan 160°C/gas mark 4).

2. Heat the oil in a large oven-proof casserole.

3. Add the pork pieces, chopped onion and garlic, and cook until browned.

4. Add all the other ingredients, except the potatoes, butter and parsley, and bring to the boil.

5. Arrange the potatoes around the edge, then cover with a lid or foil.

6. Cook in the oven for 30 minutes.

7. Remove from the oven, brush the potatoes with butter and sprinkle over some chopped parsley. Return to the oven uncovered for about an hour until the meat is tender and the potatoes are browned.

8. Serve with your favourite seasonal vegetables.
