Chewy chocolate cookies

These simple yet scrumptious cookies are sure to put a smile on Dad’s face this Father’s Day!

Ingredients (makes 16):
60g butter
115g milk chocolate
200g granulated sugar
125g plain flour
3 tbsp cocoa powder
1 tsp vanilla essence
Pinch of salt
Pinch of baking powder
2 large eggs

Method:
1. Heat the oven to 180°C (fan 160°C/gas mark 5).

2. Melt the butter and chocolate in a bowl in 30-second intervals in the microwave, or pop the bowl over a pan of simmering water.

3. Stir the mixture and leave it to cool.

4. In another bowl, beat the eggs and sugar together for 4-5 minutes.

5. Mix in the chocolate and butter mixture to the eggs and sugar. Add the vanilla essence then sift in the cocoa powder, flour, salt and baking powder. Mix well.

6. Line two baking trays with greaseproof paper, then use two dessert spoons to put four blobs of mixture on each tray. These spread during cooking so don’t make them too big.

7. Bake for 10 minutes. Leave to cool for a few minutes then transfer to a wire rack to completely cool whilst you cook the other batch.
