Black bean and coriander burgers

With two bank holidays to enjoy this month, why not bring out the barbecue and have a go at making these vibrant vegetarian burgers? They’re packed full of flavour and so easy to make.
Ingredients (makes 6):
2 x 400g tin of black beans
1 bunch of spring onions
1 lime
180g fresh breadcrumbs
2 teaspoons of lazy garlic
30-40g fresh coriander
2 tbsp soy sauce
2 tbsp tahini
Salt and pepper
Burger buns
Your choice of extra fillings and barbecue accompaniments
Method:
1. Drain and rinse the black beans, then crush them with a potato masher in a large bowl until they are mostly mashed, leaving a bit of texture.
2. Trim the spring onions, then finely slice and add them to the bowl along with the lazy garlic, lime zest and juice, soy sauce, tahini, breadcrumbs, salt and pepper, and washed and finely chopped coriander (including the stems).
3. Mix all this together well, then divide into six portions. Shape into burger rounds.
4. Brush each side with a little oil and cook for five minutes each side on the barbecue or bake in the oven at 190°C (170°C fan/gas mark 5) for 20 minutes.
5. Serve in a burger bun with your choice of extra fillings, which could include lettuce, guacamole, large vine tomato slices, red onion, cress, tomato sauce or mayonnaise.Copyright © 2026 The Local Answer Limited.
