Mincemeat Oat Cookies

A quick and easy bit of baking to do with the kids during the Christmas holidays. This recipe makes 10 cookies, but you could make double or triple the quantity and wrap them up as a Christmas gift.
Ingredients:
100g soft butter
50g soft brown sugar
50g plain flour
100g porridge oats
2-3 tbsp mincemeat
1 tbsp demerara sugar
½ tsp mixed ground spice
Method:
1. Preheat the oven to 190°C (fan 170°C/gas 5).
2. Using an electric hand whisk, beat the butter, sugar and flour until combined, then stir in the oats and mincemeat.
3. Bring the dough together with your hands; take walnut sized pieces and roll into balls.
4. Arrange the balls, spaced apart, on oiled baking trays. Press the top of each ball very slightly to flatten it. Mix the demerara sugar with the mixed ground spice and sprinkle on top of the cookies.
5. Bake for 18 minutes or until golden. Cool on the trays for 10 minutes before transferring to wire racks to cool completely.
