Sausage and pasta bake

This recipe is a real crowd pleaser – a comforting, hearty dinner for the whole family!

6 sausages (meat or vegetarian), skinned and rolled into balls
300g butternut squash, peeled and diced
1 tsp dried sage
200g penne pasta (or wholewheat pasta)
1 pack of tenderstem broccoli roughly chopped
500g carton of tomato passata
100ml single cream
1 mozzarella ball or grated cheddar cheese for the topping

1. Preheat the oven to 200°C (fan 180°C/gas 6).

2. Put the butternut squash in a roasting tin, season well, then add a tablespoon of olive oil. Mix the squash and oil to coat, then sprinkle over the sage. Roast for approximately 20 minutes, then add the sausage balls and cook for another 10 minutes.

3. Bring a large saucepan of water to the boil, add the pasta and cook according to the instructions. Add the broccoli for the last four minutes and then drain well.

4. Put the pasta and broccoli into a large ovenproof dish. Mix the tomato passata with the cream, then stir into the pasta and broccoli until well covered. Add the butternut squash and sausage balls, pushing them carefully into the pasta mix.

5. Pull apart the mozzarella and scatter over the top or sprinkle with the grated cheddar.

6. Bake for about 20-25 minutes until the cheese has turned golden brown.
