Popcorn cookies

A yummy treat for the children to make for a Halloween party. Makes 20-25 depending on the size of the dough balls.
Ingredients:
230g butter
250g demerara sugar
300g self raising flour
½ tsp baking powder
1 large egg
150g bag of popcorn (toffee popcorn gives a gooey texture but sweet popcorn is fine)
100g high quality dark baking chocolate
Method:
1. Heat the oven to 180°C (fan 160°C/gas mark 4).
2. Soften the butter carefully in the microwave then beat together with the sugar.
3. Lightly beat the egg then add to the mixture and continue to beat until well combined.
4. Add the flour, baking powder and about 50g of popcorn, mixing it all well together.
5. Roll the dough into 20/25 balls, place 6 at a time onto a large baking tray lined with greaseproof paper.
6. Lightly flatten each one then press pieces of popcorn into the dough.
7. Bake for approximately 12 minutes until golden. Leave on the tray to cool for two minutes then transfer to a wire rack to cool. Repeat with the other dough balls. It is important to not put too many on the baking tray at once, as they spread and will all join together.
8. Melt the chocolate in a bowl over a saucepan of simmering water then, using a spoon or a piping bag with a small round nozzle, drizzle a random pattern over the cookies.
