Halloween Cookies

With a tasty twist on the traditional toffee apple, this recipe is great for kids to help make for a spooktacular party treat!
Ingredients:
Makes 25 cookies
175g softened butter
50g ground almonds
140g golden caster sugar
225g self-raising flour
85g toffees
85g ready-to-eat dried apple
2 egg yolks
Milk for brushing
Method:1 Preheat the oven to 190°C (fan 170°C/gas mark 5).
2 Using an electric whisk, beat together the butter and sugar until pale and creamy.
3 Cut the dried apple and toffees into small pieces. You may need to put the toffees in the microwave for a few seconds to soften slightly.
4 Whisk in the egg yolks until the mixture is combined, then stir in the ground almonds and flour to form the cookie dough.
5 Add the chopped apple and toffees and mix well.
6 Using a dessert spoon, scoop small handfuls of the mixture and roll into approximately 25 balls.
7 Place well apart on three lined baking sheets and flatten with the back of a spoon.
8 Brush with a little milk and bake for 9-12 minutes until golden brown. Keep an eye on the cookies for the last few minutes to make sure they don’t burn.
9 Leave the cookies to cool and slightly harden for five minutes before moving onto a wire rack, otherwise they will crack.Copyright © 2024 The Local Answer Limited.
