Fruit, nut and cider cake

With a hint of spice and all things nice, this special cake should go down a treat on Father’s Day!
Ingredients:
6 eating apples
50g sultanas
50g raisins
100g chopped walnuts
6 tbsp cider of your choice
220g plain flour
1 ½ tsp baking powder
½ tsp ground cinnamon
¼ tsp ground ginger
¼ tsp ground cloves
¼ tsp nutmeg
½ tsp salt
175g butter
2 medium eggs
275g golden caster sugar
15g cornflour
Method:
1. Put the sultanas and raisins in a small bowl and add 3 tbsp cider. Leave for at least two hours for the fruit to swell.
2. Heat the oven to 180°C (160°C fan/gas mark 4). Grease and line a 23cm round, loose-bottomed cake tin.
3. Sift the flour, cornflour, baking powder, salt and spices into a large bowl.
4. Add the sugar and softened butter and beat with an electric mixer for about 2-3 minutes.
5. Add the eggs and continue to beat until light and fluffy. Add the remaining 3 tbsp cider and mix well.
6. Peel, core and cut the apples into 1cm pieces. Fold these into the mixture with the sultanas, raisins and walnuts.
7. Spoon the mixture into the tin and level the top.
8. Cook for approximately 1½ hours (a skewer should come out clean when pushed into the centre) but cover with foil when the top has browned.
9. Leave to cool completely then remove onto a serving plate and sprinkle with a little more golden caster sugar.Copyright © 2024 The Local Answer Limited.
