Delectable Duck Salad

Ingredients:
2-4 duck breasts
½ kg new potatoes
Salad leaves
Handful of coriander
1 lemon
1 apple, sliced
Red pepper, diced
A few radish, sliced
Method:
1. Pan fry 4 duck breasts for 20 minutes – if preparing the salad as a lighter lunch option, oven cook 2 duck breasts at 180 degrees for 40 minutes (vary the time depending on the size of the duck breasts).
2. Boil new potatoes for 15 minutes or until soft.
3. Mix the salad leaves with coriander, apple, red peppers and radish and prepare on plates. Squeeze lemon juice over the salad.
4. Slice the duck breasts and serve with the salad and new potatoes. For the lighter option shred the duck breast and mix into the salad – serve with new potatoes if you want.Copyright © 2024 The Local Answer Limited.
